Roll-top bags are water resistant to splashing and brief immersion when rolled properly, three or more turns. They are not designed for being submerged for long periods.
What about my phone?
A dedicated waterproof phone case is more reliable than trusting a bag alone. Test any case with a tissue inside before trusting a phone to it.
Should I bring valuables at all?
Take as little as possible. Most operators offer somewhere to leave things, and a boat deck is a poor environment for anything that matters.
